Turn up the heat and flavor for the big game with tasty BBQ

StatePoint - Hosting a Big Game watch party? By following the playbook of BBQ experts, you’ll have your friends and family cheering for your game day spread.

“The trick to achieving tasty BBQ is real smoke flavor. And, to get real smoke flavor, you need quality, natural hardwoods, with or without a pellet grill,” says Levi Strayer of Bear Mountain BBQ, “Start grilling with pellets, and everyone will immediately taste the difference—it’s a game changer.”

With that philosophy in mind, Bear Mountain BBQ ambassador Jennifer Danella is sharing two BBQ winning recipes. Both incorporate the brand’s premium pellets to bring unbeatable flavor to the table.

For dudes that know their way around a flame, taking your cooking skills to the next level, all you need is a little inspiration to go along with those deft skills you already have around a grill. It is easy to turn family meals or get-togethers with guys into an extravagant culinary adventure, take your backyard barbecues to new heights and impress friends and neighbors with your pitmaster-worthy creations.

In fact, it can be as easy as turning on the TV. From beef ribs and barbacoa to curried brisket rice and pho rub beef belly spring rolls, viewers are in for a treat by tuning into season 3 of "BBQuest: Beyond the Pit," a video series that dives into the long-held traditions, new flavors and everyday inspiration that make Texas barbecue legendary.

The show follows four themes that capture the very essence of Texas barbecue: legacy and tradition; creativity and innovation; Texas trailblazers; and family and community.

You can bring barbecue flavors home and cook like a pitmaster with dishes recreated from the series and developed by "Hardcore Carnivore" cookbook author Jess Pryles, including Smoked Chuck Beef Ribs and these mouth-watering Grilled Jalapeno Cheddar Meatballs.

"Since launching BBQuest four years ago, it's truly remarkable to see how much has changed and yet stayed the same when it comes to Texas barbecue, and that's exactly what you see in season 3," said Rachel Chou, Texas Beef Council's director of consumer marketing. "There has been so much exciting innovation around cooking methods and international flavors while there's still a huge dedication to long-held recipes and smoking techniques."

The worst BBQ ingredient ever: wire brush bristles

Why hundreds of people in the U.S. are sent to the emergency room each year
by Matt Sheehan
OSF Healthcare
Summer has arrived, and that means grilling season has come back after its winter hibernation.

But as Americans enjoy grilling their burgers, chicken, vegetables and more, there’s one ingredient you want to steer clear of.

Dr. Brian Curtis, M.D

"These short, metal brushes that you clean your grill with," Brian Curtis, M.D., vice president of the Clinical Specialty Services at OSF HealthCare says. "There are about 150-200 cases a year that occur in the United States. They may be underreported, but those are the ones that we know about."

While barbecues over an outdoor grill are a great way for people to come together and enjoy a meal, Dr. Curtis says it could be an extremely painful experience if you end up swallowing a bristle from a wire brush.

"The bristles can become embedded in your tongue. They can be embedded in the back of your throat, esophagus, stomach, and small intestine," Dr. Curtis says. "They can cause perforations, because it’s like swallowing a small needle. There are people every year that have surgeries trying to find these small objects because they are very tiny."

So how can you keep your food on the grill from getting an unwanted extra ingredient? Dr. Curtis says it’s all about preparation.

"You can use aluminum foil. Some people use nylon (scrapers)," Dr. Curtis says. "I just use a wool brush on mine. If you don’t want to go away from the wire brush, then you really have to inspect your grill very closely to make sure there’s nothing stuck on it."

Dr. Curtis says if you believe you’ve swallowed a wire brush bristle, you need to be evaluated immediately.

Recipe: Grilled lemon chicken

Photo provided

NewsUSA -- The last few weeks of fall are just around the corner and winter weather is on the way. Even as the days get shorter and the temperatures lower, it is still a great time to be outdoors and grill. Add a little zest the next time you throw some chicken on the grill with lemons.

“With their sunny zest and refreshing juice, lemons aren’t just delicious, they also pack a healthy punch,” says Karen Brux, managing director for the Chilean Fresh Fruit Association. Lemons are a good source of many key nutrients, including vitamin C, potassium, and fiber. “You could say that lemons from Chile are the unsung heroes of summer,” Ms. Brux adds.

Lemons are versatile. Try adding lemon juice to marinades, lemon slices to creamy pasta sauces, or featuring fresh lemons in lemon custards or meringues for an ultimate end-of-summer dessert. When cooking with lemons, you can use their zest or juice, but try them grilled, says Brux.

Grilling intensifies the flavor of the lemon juice. Just put some slices on the grill along with your fish, beef or chicken. Grilled lemon wedges work in cocktails, too!

Try this easy recipe for grilled chicken with lemon:

Grilled Chicken with Lemon

Ingredients:

  • zest of two lemons

  • 1/2 cup olive oil

  • 6 cloves chopped garlic

  • 5 sprigs rosemary

  • 1 tsp kosher salt

  • coarse black pepper to taste

  • 4 large chicken thighs

  • Instructions:

Preheat the oven to 425 degrees Fahrenheit.

In a large shallow baking dish, whisk together the juice and zest of 2 lemons, 1/2 cup olive oil, 6 cloves chopped garlic, 5 sprigs of rosemary, 1 teaspoon of kosher salt and plenty of coarse black pepper.

Add 4 large chicken thighs to the mixture, toss to coat and let the chicken rest for 45 minutes at room temperature.

Before cooking, be sure the chicken thighs are skin-side up. Cut the remaining zested lemons into halves or quarters, and nestle them among the chicken. Add a final grind of black pepper on top.

Bake at 425 degrees Fahrenheit for 40 minutes or until the juices run clear. If you would like extra browning, briefly place the baking dish under the broiler.

Food | Giving plasma? Boost iron levels with this marinated skirt steak recipe

    skirt steak for dinner

Recipe to help boost iron levels, aid plasma donation recovery

Family Feature -- Chef Nate Appleman knows how important it is to serve healthy meals to your family - ones they actually want to eat. Before having his first child, he transformed his eating and exercise habits and lost 85 pounds to get on a healthier path.

Now, he's cooking meals for his family, including 14-year-old Oliver who was diagnosed with Kawasaki Disease as a toddler - an inflammation of the blood vessels that can cause damage to coronary arteries - as a healthy lifestyle is important to help manage the disease. Since Oliver's diagnosis, Appleman made it his personal mission to create awareness of Kawasaki Disease and for the critical need for plasma donations that many people with the disease rely on for treatment, which is why he partnered with Abbott to bring attention to the need for plasma donations.

Plasma is a powerful part of your blood that supports essential bodily functions. It's a lifeline for thousands of people who are immune-compromised and live with a variety of chronic and complex diseases. In fact, more than 125,000 Americans rely on medication made from plasma every day, according to the Plasma Protein Therapeutics Association (PPTA).

The COVID-19 pandemic led to a serious shortage of plasma donors - average donations per center in the United States were down approximately 11% during the first few months of 2021 compared to the previous year, further deepening the nearly 20% decline in donations in 2020 compared to 2019, according to the PPTA.

Donating plasma is a safe and relatively easy process. Since plasma is replaced in the body within about 24 hours, it can be donated up to twice per week. With a donation that typically takes between 1-3 hours, you can make a lasting impact by providing lifesaving medicine for patients like Oliver.

It's a good idea to fuel up with iron-rich foods before and after donating, so Appleman created these fresh, nutritious recipes he loves to serve his family: Marinated Skirt Steak (see recipe below), Lemon Chicken with Roasted Red Onions and Potatoes, and Cheesy Frittata with Veggies.

Learn where you can donate at bethe1donor.abbott.

Family Features - As you plan your summer fun, think also about adopting healthy habits that can help keep your blood pressure under control. When your blood pressure is consistently high - a condition called hypertension - blood flows through arteries at higher-than-normal pressures. This can cause serious health problems not just for your heart, but also for your blood vessels, kidneys, eyes and brain.

Hypertension affects women and men of all ages but making small lifestyle changes can go a long way toward prevention. Start with updating your summer menu with delicious, heart-healthy recipes, like Hawaiian Huli Huli Chicken.

Following a heart-healthy eating plan, such as the Dietary Approaches to Stop Hypertension (DASH), which emphasizes vegetables, fruits, whole grains, fish, poultry, beans, nuts, low-fat dairy and healthy oils, can help keep your blood pressure in a healthy range. Developed through research by the National Heart, Lung, and Blood Institute (NHLBI), DASH focuses on reducing sodium and limiting foods that are high in saturated fat, including fatty meats, full-fat dairy and tropical oils.

Along with adding healthy recipes to your summer menu, NHLBI's The Heart Truth program encourages these healthy habits that can help you control blood pressure:

Move more: Aim for at least 150 minutes (2 1/2 hours) of physical activity each week. Try keeping yourself on pace each week by shooting for 30 daily minutes of activity over five days.

Aim for a healthy weight: Research shows adults with overweight and obesity can lower their blood pressure by losing just 3-5% of their weight. Ask a friend or family member to join a weight loss program with you; social support can help you both stay motivated.

Manage stress: Reduce stress - which can increase blood pressure - with meditation, relaxing activities or support from a counselor or online group.

Quit smoking: Smoking damages your heart and blood vessels. Call 1-800-QUIT-NOW or find other resources available online.

Get your summer off to a heart-healthy start by talking to your health care provider about your blood pressure numbers and what they mean. To learn more about heart health and blood pressure, visit hearttruth.gov and find DASH-friendly recipes at healthyeating.nhlbi.nih.gov.

Opening statement, Spartans send message to conference opponents

    Photo: Sentinel/Clark Brooks

Fighting his way past Monticello's Hunter Romano, St. Joseph-Ogden defensive back Tayton Gerdes flows across the field to contain the Sages quarterback. The Spartan proved stout, holding the host to just 90 yards on the ground.

MONTICELLO - Monday and Tuesday's weather forecast called for spotty rain for last Friday. By Wednesday, the updated forecast said rain after 9 p.m., and on Thursday it looked like St. Joseph-Ogden's season opener against Monticello would be rain-free. But no, said Mother Nature late Friday afternoon. A meandering storm system producing heavy rain—nearly 2 inches, according to a couple of Monticello residents—and frequent lightning forced the long-awaited game to Saturday.

After receiving the opening kickoff, like the lightning storm that passed through Piatt and Champaign County Friday evening, the Spartans struck frequently, scoring five times in the first half before Monticello could reply.

Thanks to solid offensive planning and execution, a balanced offensive effort, and four talented scoring weapons, SJO won the delayed season opener, 40-28.

Junior Tim Blackburn-Kelley caught a screen pass on the opening play and sprinted 80 yards to the south end zone at Monticello's Wilkey Sports Complex. "I caught the pass and my guys were blocking for me," Blackburn-Kelley explained. "I saw green grass and I just had to get on my horse and go."

    Wyatt Wertz
    Photo: Sentinel/Clark Brooks

SJO running back Wyatt Wertz take the ball through a hole in the Monticello defense. Wertz lead the Spartan ground game with 102-yards on 14 carries. See the Sentinel photo gallery for more pictures.

Blackburn-Kelley finished the game with 95 yards on three catches and added 28 yards on four carries.

On the Spartans' next possession, Jared Altenbaumer intercepted the ball with just under six minutes left in the first quarter. Kodey McKinney kept the ball on a draw play and dashed 67 yards through the Monticello defense to put SJO up 12-0.

The Sages' defense faltered again four minutes later. Coy Taylor carried the ball 37 yards to the 2-yard line and scored on the following play for a two-yard plunge to give SJO a 20-0 lead after Charlie Schmitz's PAT.

"We did a lot of things right. We came out very strong in the first quarter," Taylor said. "The first play of the game, we sent a message, and that's what we wanted to do."

Shawn Skinner's Spartans were on fire, unveiling another offensive weapon in Tanner Siems. His two catches totaled just 13 yards—each resulting in a touchdown. Siems announced himself as a playmaker, showcasing his wingspan and speed. Siems may be the first receiver in the Skinner era to join the ranks of exciting ball magnets like Cole Berry (2013-15) and Lukas Gones (2006-08).

Up 34-0, SJO pumped the brakes and relaxed a bit too early.

With a minute and a half left in the first half, Monticello's Ike Young scored on a 13-yard run to make it 34-7 at halftime.

Coming out of the locker room after the intermission, the Sages weren't quite ready to accept their first conference loss.

Showing both confidence and courage, Young threw back-to-back five-yard TD passes — one to Nolan Buehnerkemper in the third quarter and another to Carter Foran in the fourth—narrowing the deficit to two scores.

"I think the team, including myself, thought they would just roll over," Blackburn-Kelley said. "We had to get in each other's grill and finish the game."

One area he feels the team needs to work on for next week is staying focused for all four quarters.

"I think we need to work on staying focused and playing hard when we're tired," he said, looking ahead to Week 2 against Unity at home this Friday.

Taylor, who had nine catches for 82 yards and 43 yards on five carries, believes he and his Spartan teammates also need to work on leadership.

    Photo: Sentinel/Clark Brooks

Senior Jackson Ennis celebrates the Spartans' first win of the season with the Maroon Platoon. His leadership was key in the victory and SJO will need more of it during the regular season to come out on top of the Illini Prairie.

"During the second half, we started out slow on both sides of the ball. We need to make sure we're not asleep or anything like that because a good team will take advantage of that."

With just over six minutes left in the game, McKinney found Taylor in the end zone for a 12-yard TD. Up 40-21, the Spartans missed on a few cylinders, giving Monticello the chance to score once more before the final buzzer.

McKinney finished his varsity quarterback debut spectacular fashion, going 12-for-14 passing for 208 yards, and four TDs.

Monticello drove down the field, and Young scored again on a keeper from the three-yard line, making the final score 40-28 after the PAT.

Spartan head coach Shawn Skinner attributed the second-half slump to the squad's youth and inexperience. He noted that for many players, it was their first extensive varsity experience.

"Good teams don't stop playing football, and that was true of our opponent today," Skinner said thoughtfully. "We need to learn that to be a good team. We can't just stop playing when we get up big early."

The Spartan offense totaled 454 yards for the day. The passing game barely skipped a beat from the previous season, with the receiving corps amassing 208 yards. Meanwhile, the ground attack added another 246 yards. The Sages finished with 405 total yards.

Skinner said he didn't think the Spartans could have played the first quarter and a half any better.

"We did a lot of things right. I think that's a credit to the work our kids have put in," he said. "We clearly have some guys who can play well on both sides of the football. They have to understand, they have to play all 48 minutes."

    Box Score:
    SJO                      20 - 15 -   0 -  6 - 40
