Recipe | Warm and wonderful, Pastrami-Spiced Veal Burgers

Yield: 6 servings

12 slices Smoked Gouda, sliced thinly
2 cups Sauerkraut, rinsed and drained
3/4 cup Mayonnaise
1 oz Fresh breadcrumbs
4 oz Milk
2 tsp Salt
2 lbs Ground veal
2 tsp Black peppercorns
2 tsp Coriander seeds
1/2tsp Mustard seeds
1 tsp Sweet paprika
1 tsp Onion powder
1/2 tsp Garlic powder
1 tsp Brown sugar
1/2 cup Whole grain mustard

How to make it

Place the breadcrumbs, milk, and salt in a bowl and soak the breadcrumbs until softened. Mix the veal with the breadcrumb mixture and combine to form six patties. Toast the peppercorns, coriander, and mustard seeds in a dry pan. Let cool and grind them with the paprika, onion powder, garlic powder, and brown sugar. Coat the burgers with the spice mixture. Heat a grill on medium-high heat. Grill the burgers to desired doneness but at least 71°C (160°F) for food safety, adding a slice or two of cheese to each burger towards the end, to slightly melt. Spread the bottom of the bun with the mayonnaise, and top with whole grain mustard. Place the burger on the bottom, top with sauerkraut, and top with the bun.

Red Velvet Mug Cake


Servings: 1

6 tablespoons flour
2 tablespoons sugar
1 teaspoon cocoa powder
1/4 teaspoon baking powder
1/8 teaspoon salt
1/3 cup milk
2 tablespoons butter, melted
2 teaspoons vanilla extract
30 drops red food coloring
3 tablespoons powdered sugar
1 tablespoon cream cheese, softened

In 12-ounce mug, whisk flour, sugar, cocoa powder, baking powder and salt. Add milk, butter, vanilla and food coloring; mix until blended.

In small bowl, mix powdered sugar and cream cheese until smooth.

Drop cream cheese mixture into cake batter. Press into batter until covered.

Microwave up to 3 minutes until cake is done.

That’s why for the first time in nearly 40 years, McCormick is debuting a brand new design for its red cap branded products that audibly seals in aromas and flavors, for long-lasting freshness of herbs and spices. And to help you make the most of summer, McCormick is sharing this recipe for Fresh Peach Pie, which incorporates rich and bright summer fruits, and a sweet note of cinnamon spice:

Ingredients:
• 3 pounds fresh peaches, peeled, pitted and sliced (about 7 cups)
• 1/2 cup plus 3 tablespoons sugar, divided
• 1 teaspoon lemon zest
• 1 tablespoon fresh lemon juice
• 1/4 teaspoon plus 1/8 teaspoon salt, divided
• 1 1/2 teaspoons McCormick Ground Cinnamon, divided
• 1 package (14.1 ounces) refrigerated pie crusts, (2 crusts)
• 3 tablespoons corn starch
• 1 tablespoon McCormick All Natural Pure Vanilla Extract
• 1 tablespoon water

Instructions:
1. Mix peaches, 1/2 cup of sugar, lemon zest and juice, and 1/4 teaspoon of salt in large heat-safe bowl until well blended. Let stand 30 minutes. Drain peaches, reserving 8 tablespoons of juice. Return peaches to bowl; sprinkle with 1/2 teaspoon of cinnamon. Set aside.

2. Meanwhile, prepare pie crust as directed on package. Roll each crust into 12-inch circles on lightly floured surface. Press 1 crust into bottom of 9-inch pie plate. Cut remaining crust into 10 strips, about 1-inch wide. Refrigerate pie plate with bottom crust and prepared strips until ready to assemble pie.

3. Preheat oven to 425 degrees F. Mix 2 tablespoons of remaining sugar, remaining 1/8 teaspoon salt, remaining 1 teaspoon cinnamon and corn starch in small bowl. Add 2 tablespoons of reserved peach juice to cornstarch mixture, whisking to mix well; set aside.

4. Place remaining 6 tablespoons peach juice in small saucepan. Bring to simmer on medium-low heat. Stir in vanilla. Whisk cornstarch slurry into saucepan. Cook and stir just until thickened and smooth, about 30 seconds. Remove from heat. Pour syrup mixture over peaches; toss to coat. Allow to cool slightly.

5. Spoon peach mixture into chilled pastry-lined pie plate. Arrange pie dough strips over top to create a lattice (see below for instructions). Trim dough strips about 1/2-inch longer than bottom pie crust. Fold strips underneath crust and pinch to adhere. Crimp or flute crust edges, as desired. Brush lattice with water and sprinkle evenly with remaining 1 tablespoon sugar. Place pie plate on large shallow baking pan.

6. Bake 25 minutes or until crust is lightly browned. Reduce heat to 375 degrees F. Rotate pan. Bake 30 to 35 minutes longer, until crust is golden brown and filling is bubbly. Cool on wire rack. Serve with vanilla ice cream, if desired.

How to weave a lattice top crust: Using longer strips for the center of pie and shorter strips for edges, arrange 5 pie dough strips vertically over top of filling, leaving about 1 inch of space between each strip. Fold back every other strip (2 and 4) to just above midline of pie. Place one of the longer strips across pie horizontally, just below the fold. Fold vertical strips back down over top of the horizontal strip. Fold back the opposite vertical strips (1, 3 and 5) and place another strip below the first horizontal strip, again leaving about 1 inch of space between them. Fold vertical strips back down over top. Repeat this process with one more strip below, and then 2 strips above first crosswise strip. Work quickly, as the warm filling may make the dough difficult to work with.

After 15 to 20 minutes of baking, cover edge of crust with foil strips to prevent excessive browning.

  • Avoid washing cast iron in the dishwasher.
  • Cast iron is very durable, and you can wash it by hand, but dishwashers are not kind to it. The high heat and harsh detergents can damage your cookware, causing rust spots or warping, making the pan unusable.
  • Try using a stiff brush to remove stuck-on food

    Use salt instead if you want to go natural with your cleaning methods. All you need to do is sprinkle some coarse salt on top of any stubborn food residue before heating some water over medium heat until it boils. Then, let everything sit for about 15 minutes so everything gets nice and softened before rinsing off again. Just make sure to do this once it's cool enough not to burn yourself. This should take care of just about anything except egg yolks.

    Don't use soap on cast iron cookware

    Since you can make everything from cooked dishes to homemade pizza with this cookware, you should know how to clean it. However, one of the biggest mistakes is using soap on cast iron cookware.

    Soap can strip away the seasoning, leaving your pan vulnerable to rust. Not to mention it's easier for food to stick to it. If you're using a pan for sauteing meat or vegetables, it's best to wipe it down with oil after use instead of washing it with soap. The fat will help protect your pan from oxidation and keep it looking shiny!

    Clean the surface of your cast iron with a sponge and water only

    Hot water and a sponge are the best way to clean your cast iron cookware. Do not use soap or any other cleaning product unless you are trying to remove food residue from the pan's surface.

    If so, scrub gently with soap and water and dry immediately after washing off all traces of soap from your cast iron pan.

    You can also use a Scotch-Brite pad or steel wool. These products will help remove any burned-on food residue from your cast iron pan. Rinse the piece well with hot water, and then dry it thoroughly before storing. Store cast iron flat when it's not being used When you're not using your cast iron cookware, it's important to store it flat. If you need to set up your new kitchen after moving in, make sure to find enough place to store your cast iron cookware. If you keep it flat, it will prevent rusting and allow the oil that naturally builds up in the pan to seep back into the pores of the metal.

  • Don't stack your pans on top of each other – this will cause them to scratch and damage each other over time.
  • Make sure not to store it in an oven or microwave – the heat from these appliances can warp or crack the handles of your pans.
  • Don't put them in a dishwasher – the harsh chemicals used by most detergents are damaging for any cookware, but especially so for cast iron since they'll strip away any seasoning from previous uses as well as leave behind residue that may cause food sticking problems later on down the road.
  • Cast iron can last for decades if you treat it right

    Cast iron cookware is durable, long-lasting, and versatile. It can be used on the stovetop or in the oven, over an open fire, and even under a broiler if you're feeling adventurous. Cast iron is also easy to clean – wipe it out with a paper towel when you're done cooking!

    Servings: 4

    • 3 quarts water
    • 8 ounces dry whole-wheat spaghetti
    • 2 cups chunky tomato sauce
    • 4 teaspoons grated Parmesan cheese
    • 1 tablespoon fresh basil, rinsed, dried and chopped

    Turkey Meatballs:

    • 6 ounces 99% lean ground turkey
    • 1/4 cup whole-wheat breadcrumbs
    • 2 tablespoons fat-free evaporated milk
    • 1 tablespoon grated Parmesan cheese
    • 1/2 tablespoon fresh chives, rinsed, dried and chopped
    • 1/2 tablespoon fresh parsley, rinsed, dried and chopped

    Beef Meatballs:

    • 6 ounces 93% lean ground beef
    • 1/4 cup whole-wheat breadcrumbs
    • 2 tablespoons fat-free evaporated milk
    • 1 tablespoon grated Parmesan cheese
    • 1/2 tablespoon fresh chives, rinsed, dried and chopped
    • 1/2 tablespoon fresh parsley, rinsed, dried and chopped
    1. Preheat oven to 400 F.
    2. In 4-quart saucepan over high heat, bring water to boil.
    3. Add pasta and cook according to package directions. Drain and set aside.
    4. To make turkey meatballs: In bowl, combine ground turkey, breadcrumbs, evaporated milk, Parmesan cheese, chives and parsley; mix well. Measure 1 1/2 tablespoons turkey mixture and roll into ball using hands. Place meatball on nonstick baking sheet. Repeat until eight turkey meatballs are made.
    5. To make beef meatballs: In separate bowl, combine ground beef, breadcrumbs, evaporated milk, Parmesan cheese, chives and parsley; mix well. Measure 1 1/2 tablespoons beef mixture and roll into ball using hands. Place meatball on nonstick baking sheet. Repeat until eight beef meatballs are made.
    6. Bake meatballs 10 minutes until minimum internal temperature of 165 F is reached.
    7. Warm sauce, if necessary.

    To serve: Serve four meatballs with 3/4 cup pasta, 1/2 cup sauce, 1 teaspoon Parmesan cheese and 1 pinch basil per portion.

    American Legion to host fish fry benefit for Troop 40

    St. Joseph - Tickets are on sale now for three fish frys to raise money for St. Joseph's Boy Scouts.

    The American Legion will host the first of three fish frys this Friday, January 27, the next one on February 24, and the final event on March 24.

    The $10 meal includes two sides and a drink. Food will be served starting 4:30 pm and continue until 7 pm or until the fish is sold out on all three dates. Advance tickets can be purchased this Wednesday 4:30 to 6:30 pm at the IGA. Meal tickets can also be bought at the door on the day of the fry.

    Recipe: Grilled lemon chicken

    NewsUSA -- The last few weeks of fall are just around the corner and winter weather is on the way. Even as the days get shorter and the temperatures lower, it is still a great time to be outdoors and grill. Add a little zest the next time you throw some chicken on the grill with lemons.

    “With their sunny zest and refreshing juice, lemons aren’t just delicious, they also pack a healthy punch,” says Karen Brux, managing director for the Chilean Fresh Fruit Association. Lemons are a good source of many key nutrients, including vitamin C, potassium, and fiber. “You could say that lemons from Chile are the unsung heroes of summer,” Ms. Brux adds.

    Lemons are versatile. Try adding lemon juice to marinades, lemon slices to creamy pasta sauces, or featuring fresh lemons in lemon custards or meringues for an ultimate end-of-summer dessert. When cooking with lemons, you can use their zest or juice, but try them grilled, says Brux.

    Grilled Chicken with Lemon

    Ingredients:

  • zest of two lemons

  • 1/2 cup olive oil

  • 6 cloves chopped garlic

  • 5 sprigs rosemary

  • 1 tsp kosher salt

  • coarse black pepper to taste

  • 4 large chicken thighs

  • Instructions:

    Preheat the oven to 425 degrees Fahrenheit.

    In a large shallow baking dish, whisk together the juice and zest of 2 lemons, 1/2 cup olive oil, 6 cloves chopped garlic, 5 sprigs of rosemary, 1 teaspoon of kosher salt and plenty of coarse black pepper.

    Add 4 large chicken thighs to the mixture, toss to coat and let the chicken rest for 45 minutes at room temperature.

    Before cooking, be sure the chicken thighs are skin-side up. Cut the remaining zested lemons into halves or quarters, and nestle them among the chicken. Add a final grind of black pepper on top.

    Bake at 425 degrees Fahrenheit for 40 minutes or until the juices run clear. If you would like extra browning, briefly place the baking dish under the broiler.

  • 2 tablespoons olive oil
  • 1/2 cup finely chopped yellow onion
  • 8 ounces mushrooms, such as white button, crimini or portabella, finely chopped
  • 1/2 pound lean ground beef
  • 1 tablespoon taco seasoning
  • 6 burrito-size flour tortillas (about 10 inches each)
  • 1/3 cup nacho cheese sauce
  • 6 tostada shells
  • sour cream
  • 6 mini soft taco-size flour tortillas (about 4 1/2 inches each)
  • shredded lettuce
  • diced tomatoes
  • shredded Mexican cheese blend
  • nonstick cooking spray

  • Put it together

    In large skillet over medium-high heat, heat olive oil.

    Next, cook onions 1-2 minutes until translucent.

    Add mushrooms and ground beef. Cook about 5 minutes, or until beef is no longer pink.

    Stir in taco seasoning. Cook 2-3 minutes and then set aside.

    Lay one large flour tortilla on flat surface. Spread 2 tablespoons mushroom-meat mixture on center of tortilla.

    Drizzle dollop of nacho cheese over mushroom-meat mixture. Top meat with one tostada shell then spread thin layer of sour cream over tostada shell.

    Top with shredded lettuce, diced tomatoes and shredded Mexican cheese then one small tortilla. Make sure not to overstuff so wrap doesn’t break apart while cooking.

    Fold edges of large tortilla toward center until completely covered. In hot skillet, generously spray with nonstick cooking spray. Carefully place wrap seam side down on skillet. Cook 2-3 minutes until golden brown.

    Flip and cook other side until golden brown. Repeat with remaining mushroom-meat mixture, tortillas and toppings.

    Cut wraps half and serve.

    Now, he's cooking meals for his family, including 14-year-old Oliver who was diagnosed with Kawasaki Disease as a toddler - an inflammation of the blood vessels that can cause damage to coronary arteries - as a healthy lifestyle is important to help manage the disease.     Vinaigrette:
  • 1/4 cup oil
  • 1/4 cup fish sauce
  • 1/4 cup rice wine vinegar
  • 1/4 cup water
  • 2 tablespoons raw sugar
  • 1 cup chopped fresh cilantro
  • 1 lime, juice only
  • 1 clove garlic, minced
  • 1 small Thai bird chile or serrano chile, chopped
  • 1/4 head finely shaved green cabbage
  • 1/4 head finely shaved purple cabbage
  • 2 carrots, thinly julienned
  • Skirt steak:

  • 1 1/2 pounds trimmed skirt steak
  • 1/2 cup coconut milk
  • 3 cloves garlic, minced
  • 2 tablespoons lime juice
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons sriracha
  • salt, to taste
  • 3 cups cooked brown rice
  • 1/2 cup crushed peanuts
  • 1 lime, quartered, for garnish
  • To make vinaigrette: In large bowl, mix oil, fish sauce, rice wine vinegar, water, sugar, cilantro, lime juice, garlic and chile. Toss cabbage and carrots in vinaigrette; refrigerate until ready to serve. To make skirt steak: Marinate steak in coconut milk, garlic, lime juice, cilantro, sriracha and salt, to taste, at least 1 hour, or up to 24 hours. Heat grill to high. Grill 3-4 minutes each side until medium rare. Let rest 3 minutes. Thinly slice steaks against grain and serve with vinaigrette, rice and crushed peanuts; garnish with lime wedges.
