WESSON EASY EASTER SURPRISE BUNDT CAKE

Ingredients ~

For the cake:

3 ¾ cups all-purpose flour
3 teaspoons baking powder
½ teaspoon kosher salt
3 cups granulated sugar
¾ cup Wesson oil
1 ½ cups milk
6 eggs

For the filling:

1 ½ cups plus 2 tablespoons chopped, shelled, raw pistachios
¼ cup flour
2 tablespoons honey
2 tablespoons Wesson oil

For the glaze:

1 cup powdered sugar
2 tablespoons milk

Edible gold flake, for sprinkling on top

Easter candies to fill center of cake when displayed

Directions:

Making the cake:

Pre-heat oven to 350°F. Grease and flour a 10-inch (12-cup) Bundt pan.

In a large bowl, whisk together, flour, baking powder and salt until well combined.

In the bowl of a stand mixer fitted with paddle attachment, combine sugar, Wesson oil, eggs, and vanilla; mix well.

On medium speed, in four stages, add flour mixture alternating with milk, blending after each addition, ending with flour. Pour half of the batter into the pan and set aside. Next, make the filling.


Adding the filling:

In a medium bowl, mix 1 ½ cup pistachios, ¼ cup all-purpose flour, 2 tablespoons of honey, and 2 tablespoons of Wesson Canola Oil. Combine filling ingredients and mix well. Spoon the filling evenly over the surface of the batter in the pan. Top with remaining batter. Bake the cake in the center of oven for 1 hour and 15 minutes, or until a tester inserted in center comes out clean.

Remove cake from oven; cool in pan on a rack for 15 minutes. Carefully turn cake out onto serving platter and cool completely.

TIP: If cake does not turn out easily, gently run a knife around the outside edge of the cake.


Creating the glaze:

In medium bowl, combine 1 cup icing sugar (powdered sugar) and 2 tbsp of 3% milk. Stir until smooth. Spoon icing onto top of cooled Bundt cake and allow to glaze to dry for 15 minutes.


The finishing touch:

Decorate cake with flakes of gold leaf and chopped pistachios. Fill center of the Bundt with your favorite Easter candies. Cut the cake in front of your guests to wow them with an outpouring of sweet treats and serve. To view the recipe online, visit purewesson.com.

St. Patrick’s Day Sandwiches
Yield: 8 sandwiches

8 ounces plain cream cheese spread, softened
1 cup finely shredded mozzarella cheese
salt
4 English muffins
24 slices cucumber
8 thin slices green pepper
fresh cilantro leaves
lemon juice
lemon slices, for garnish (optional)

In bowl, mix cream cheese spread, mozzarella cheese and salt well.

Split English muffins in half. Cut each muffin half into shamrock shape.

Spread cheese mixture over each muffin half.

Place three cucumbers on each “shamrock,” one on each “leaf.” Use green pepper slice as stem. Place cilantro leaf on top of each sandwich.

Sprinkle sandwiches with lemon juice and add lemon slices, for garnish, if desired.

12 slices Smoked Gouda, sliced thinly
2 cups Sauerkraut, rinsed and drained

2 lbs Ground veal
2 tsp Black peppercorns
2 tsp Coriander seeds
1/2tsp Mustard seeds

1 tsp Onion powder
1/2 tsp Garlic powder
1 tsp Brown sugar
1/2 cup Whole grain mustard

How to make it

Place the breadcrumbs, milk, and salt in a bowl and soak the breadcrumbs until softened. Mix the veal with the breadcrumb mixture and combine to form six patties. Toast the peppercorns, coriander, and mustard seeds in a dry pan. Let cool and grind them with the paprika, onion powder, garlic powder, and brown sugar. Coat the burgers with the spice mixture. Heat a grill on medium-high heat. Grill the burgers to desired doneness but at least 71°C (160°F) for food safety, adding a slice or two of cheese to each burger towards the end, to slightly melt. Spread the bottom of the bun with the mayonnaise, and top with whole grain mustard. Place the burger on the bottom, top with sauerkraut, and top with the bun.

Red Velvet Mug Cake


Servings: 1

6 tablespoons flour
2 tablespoons sugar
1 teaspoon cocoa powder
1/4 teaspoon baking powder
1/8 teaspoon salt
1/3 cup milk
2 tablespoons butter, melted
2 teaspoons vanilla extract
30 drops red food coloring
3 tablespoons powdered sugar
1 tablespoon cream cheese, softened

In 12-ounce mug, whisk flour, sugar, cocoa powder, baking powder and salt. Add milk, butter, vanilla and food coloring; mix until blended.

In small bowl, mix powdered sugar and cream cheese until smooth.

Drop cream cheese mixture into cake batter. Press into batter until covered.

Microwave up to 3 minutes until cake is done.

Sweet Heat Barbeque Wild Turkey Bites

Ingredients:

• 1 boneless, skinless turkey or chicken breast, approximately 2 pounds, cut into 1-inch pieces

• 1 tablespoon chili powder

• 1 teaspoon paprika

• 1 teaspoon cayenne pepper

• 1/2 teaspoon garlic salt

• 1/2 teaspoon black pepper

• 1 tablespoon loosely-packed light brown sugar

• 1 package center-cut bacon, cut in half

• Sliced green onions

• Ranch dressing

• Chef’s Choice or Butcher’s Blend Bear Mountain BBQ Pellets

• 1/2 cup sweet barbecue sauce

• 2 tablespoons buffalo sauce

• 1 tablespoon minced garlic

Directions:

1. Preheat grill to 400 degrees F.

2. Line a large baking sheet with parchment paper.

3. Place 1-inch turkey pieces into a medium size bowl. Sprinkle chili powder, paprika, cayenne, garlic salt, black pepper and brown sugar over top. Mix well.

4. Wrap half a slice of bacon around each turkey piece. Secure with a toothpick and place them onto the parchment paper.

5. Place the baking sheet into your preheated grill and bake for 25 minutes. Meanwhile, combine the barbecue sauce, buffalo sauce and garlic in a small bowl. Brush the turkey pieces halfway through cooking. Brush another layer of sauce five minutes before the cook time is over. Cook until the turkey pieces reach 165 degrees F.

6. Garnish with sliced green onions and serve with ranch dressing for dipping.


Beer Cheese Dip

Ingredients:

• 1 1/2 cups cheddar cheese grated

• 1/2 cup gruyere cheese grated

• 8 ounces cream cheese softened

• 1 tablespoon Dijon mustard

• 1/2 of a 1-ounce Hidden Valley Ranch Packet

• 2 tablespoons green onions chopped.

• 1/4 cup German lager beer

• 2 tablespoons baking soda

• 1 can biscuits

• 1 large egg, mixed with 1 tablespoon water, for brushing biscuits

• 12-inch cast iron skillet

• Bear Mountain BBQ’s Chef’s Choice Blend pellets

Directions:

1. Preheat pellet grill to 350 degrees F.

2. In large bowl, combine 1 cup cheddar, gruyere, cream cheese, Dijon mustard, Hidden Valley Ranch seasoning, beer and 1 tablespoon green onions. Mix evenly.

3. Cut biscuits in half. Roll each half into a ball, then slice an X across top.

4. Boil 2 cups water in medium saucepan. Once boiling, add baking soda and mix immediately.

5. Add biscuits to grill in batches and cook until puffy, approximately 1 minute. Remove and transfer to skillet, forming ring along inside edge.

6. Brush biscuits with egg wash. Sprinkle with salt.

7. Transfer dip to center of skillet. Sprinkle with remaining cheddar.

8. Smoke until biscuits are golden and dip is bubbly, 30-35 minutes.

9. Garnish with remaining green onions. Serve!

Mini Greek Yogurt Pancakes
with Cinnamon-Maple Topping

Total time: 25 minutes
Servings: 6

Topping:
1 3/4 cups plain Greek yogurt (fat free, 2% or 5%)
1/3 cup maple syrup
1/2 teaspoon ground cinnamon

Pancakes:
1 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
1 egg, lightly beaten
3/4 cup plain Greek yogurt (fat free, 2% or 5%)
1/2 cup milk (skim, 2% or whole)
3 tablespoons melted butter
1 teaspoon vanilla
1-3 tablespoons oil
1 cup fresh blueberries or chopped fresh strawberries


To make topping: Stir yogurt, syrup and cinnamon. Cover and refrigerate.

To make pancakes: In mixing bowl, stir flour, sugar, baking powder, baking soda and salt. In separate bowl, whisk egg, yogurt, milk, butter and vanilla. Add yogurt mixture to flour mixture. Stir just until combined (batter should be slightly lumpy).

Scrape batter into large plastic food storage bag. Oil nonstick griddle or large nonstick skillet. Heat over medium heat. Cut off about 1/2 inch from corner of plastic bag. Squeeze batter, about 1 tablespoon at a time, onto hot griddle. Cook 1-2 minutes per side, or until pancakes are golden brown, turning to second sides when bubbles form on surface of pancakes and edges are slightly dry.

Serve warm pancakes topped with cinnamon-maple yogurt and sprinkled with berries.

Yield: 16 ounces

Drink:
1 cup ice
4 tablespoons Starbucks Gingerbread Naturally Flavored Ground Coffee for double strength
6 ounces water
1 ounce Starbucks Caramel Macchiato Flavored Creamer

Toppings: whipped cream
homemade or store-bought caramel sauce
1 pinch nutmeg

Place ice in 16-ounce glass.

Brew gingerbread coffee with water and pour into glass.

  • 2 tablespoons milk
  • 1 teaspoon vanilla
  • How to put them together

    Heat oven to 350 F.

    Line baking sheet with parchment paper.

    In large bowl, whisk spice cake mix, apple butter, oil and eggs.

    With ice cream scoop or large tablespoon, spoon batter into rounded heaps, about 2-3 inches in diameter, onto parchment paper. Space spooned batter 2 inches apart.

    Bake 14 minutes. Let cool.

    In large bowl, beat cream cheese, butter and powdered sugar until smooth. Add milk and vanilla; beat until blended.

    Frost flat sides of pie halves and place halves together.

    Refrigerate and store in sealed container.

    That’s why for the first time in nearly 40 years, McCormick is debuting a brand new design for its red cap branded products that audibly seals in aromas and flavors, for long-lasting freshness of herbs and spices. And to help you make the most of summer, McCormick is sharing this recipe for Fresh Peach Pie, which incorporates rich and bright summer fruits, and a sweet note of cinnamon spice:

    Ingredients:
    • 3 pounds fresh peaches, peeled, pitted and sliced (about 7 cups)
    • 1/2 cup plus 3 tablespoons sugar, divided
    • 1 teaspoon lemon zest
    • 1 tablespoon fresh lemon juice
    • 1/4 teaspoon plus 1/8 teaspoon salt, divided
    • 1 1/2 teaspoons McCormick Ground Cinnamon, divided
    • 1 package (14.1 ounces) refrigerated pie crusts, (2 crusts)
    • 3 tablespoons corn starch
    • 1 tablespoon McCormick All Natural Pure Vanilla Extract
    • 1 tablespoon water

    Instructions:
    1. Mix peaches, 1/2 cup of sugar, lemon zest and juice, and 1/4 teaspoon of salt in large heat-safe bowl until well blended. Let stand 30 minutes. Drain peaches, reserving 8 tablespoons of juice. Return peaches to bowl; sprinkle with 1/2 teaspoon of cinnamon. Set aside.

    2. Meanwhile, prepare pie crust as directed on package. Roll each crust into 12-inch circles on lightly floured surface. Press 1 crust into bottom of 9-inch pie plate. Cut remaining crust into 10 strips, about 1-inch wide. Refrigerate pie plate with bottom crust and prepared strips until ready to assemble pie.

    3. Preheat oven to 425 degrees F. Mix 2 tablespoons of remaining sugar, remaining 1/8 teaspoon salt, remaining 1 teaspoon cinnamon and corn starch in small bowl. Add 2 tablespoons of reserved peach juice to cornstarch mixture, whisking to mix well; set aside.

    4. Place remaining 6 tablespoons peach juice in small saucepan. Bring to simmer on medium-low heat. Stir in vanilla. Whisk cornstarch slurry into saucepan. Cook and stir just until thickened and smooth, about 30 seconds. Remove from heat. Pour syrup mixture over peaches; toss to coat. Allow to cool slightly.

    5. Spoon peach mixture into chilled pastry-lined pie plate. Arrange pie dough strips over top to create a lattice (see below for instructions). Trim dough strips about 1/2-inch longer than bottom pie crust. Fold strips underneath crust and pinch to adhere. Crimp or flute crust edges, as desired. Brush lattice with water and sprinkle evenly with remaining 1 tablespoon sugar. Place pie plate on large shallow baking pan.

    6. Bake 25 minutes or until crust is lightly browned. Reduce heat to 375 degrees F. Rotate pan. Bake 30 to 35 minutes longer, until crust is golden brown and filling is bubbly. Cool on wire rack. Serve with vanilla ice cream, if desired.

    How to weave a lattice top crust: Using longer strips for the center of pie and shorter strips for edges, arrange 5 pie dough strips vertically over top of filling, leaving about 1 inch of space between each strip. Fold back every other strip (2 and 4) to just above midline of pie. Place one of the longer strips across pie horizontally, just below the fold. Fold vertical strips back down over top of the horizontal strip. Fold back the opposite vertical strips (1, 3 and 5) and place another strip below the first horizontal strip, again leaving about 1 inch of space between them. Fold vertical strips back down over top. Repeat this process with one more strip below, and then 2 strips above first crosswise strip. Work quickly, as the warm filling may make the dough difficult to work with.

    After 15 to 20 minutes of baking, cover edge of crust with foil strips to prevent excessive browning.

    Sauce:
  • 2 tablespoons ketchup
  • 2 tablespoons light soy sauce
  • 2 tablespoons honey
  • 2 teaspoons orange juice
  • 1 teaspoon garlic (about 1 clove), minced
  • 1 teaspoon ginger, minced

  • 12 ounces boneless, skinless chicken breast (about 2 large breasts), cut into 1-inch cubes (about 24 cubes)
  • 1 cup fresh pineapple, diced (about 24 pieces)
  • 8 wooden skewers (6 inches each), soaked in water

  • To make sauce: Combine ketchup, soy sauce, honey, orange juice, garlic and ginger; mix well. Separate into two bowls and set aside.

    Preheat grill to medium-high heat. Preheat oven to 350 F.

    Alternately thread three chicken cubes and three pineapple chunks on each skewer.

    Grill skewers 3-5 minutes on each side. Brush or spoon sauce from one bowl onto chicken and pineapple every other minute. Discard remaining sauce from first bowl.

    To prevent chicken from drying out, finish cooking to minimum internal temperature of 165 F in oven. Using clean brush or spoon, coat with sauce from remaining bowl before serving.

    1 quart chicken or vegetable stock
    2 cups cooked chicken, cubed
    1 1/2 cups whole corn kernels

    1/2 cup heavy cream
    1 teaspoon salt
    chopped scallions, for garnish


    How to make it

    Peel baked sweetpotatoes; discard skin and puree.

    In soup pot, saute onion in butter until softened. Add pureed sweetpotato and stock, as desired. Bring to boil, reducing liquid slightly.

    Add chicken, corn, jalapenos, heavy cream and salt. Simmer 10 minutes.

    To serve, ladle into bowls and garnish with chopped scallions.

    4. In large bowl, mix cream cheese, maple syrup, lemon juice and vanilla essence; slowly pour over warm coconut milk, whisking until combined and creamy. Divide evenly among tart tins and refrigerate 4 hours.
    5. To make pomegranate syrup: In small bowl, combine 3 fluid ounces pomegranate juice with cornstarch. In small pot, boil remaining pomegranate juice 5 minutes. Pour in cornstarch and pomegranate mixture; whisk 5 minutes until syrup forms. Cool.
    6. When cheesecakes have set, remove from tins and serve on plates. Pour pomegranate syrup on top and garnish with pomegranate seeds.

  • 1 teaspoon toasted sesame oil
  • 1 cup halved grapes from California
  • 2 scallions, thinly sliced
  • 2 teaspoons toasted sesame seeds
  • Using rolling pin, lightly smash whole cucumbers to break open. Tear or cut cucumbers into 1 1/2-inch pieces and season with salt. Transfer to sieve and drain 10 minutes.

    In large bowl, whisk vinegar, soy sauce, sugar, chili oil and sesame oil; stir in grapes and scallions.

    When cucumbers are done draining, add to bowl with grape mixture and stir to combine. Sprinkle with sesame seeds and serve.
